The NY Times has a page called "Florence Restaurants" that has got quite a spirited discussion going on. My .02 cents - most of the places mentioned are good, but there are restaurants here that are definitely "tourists" restaurants that you would never find a "vero" Florentine in (for instance, Acqua Al Due) - and many of them are mentioned in the comments on that thread.
That is not to say they are not good - they are just not really local's places (and/or real Italain or Tuscan cooking).
We think the pizza at Caffe Italiano is the best in Florence, but we know plenty of Florentines that swear by Il Pizzaiuolo - which unfortunately we have not tried yet (we'll rectify that soon enough though).
